I think I've made this confession before, I am addicted to blog reading. Some of the blogs I read are my friends & it allows me to catch up on the comical things going on in their lives. Most of them are other Christians, who many times have great words of wisdom to share. I really enjoy reading Perry Noble's blog, as he usually has great things to say. As do Lots of Scotts & Bring the Rain. But today Perry linked to another post, the title is a bit shocking, but the post itself speaks great truth to those of us that are Christians. Thanks for your comment on my blog. I don't really have a recipe for the shrimp poppers. Here's how I made mine. I took large uncooked shrimp with tails on and split them just enough to insert a piece of cheddar cheese. My cheese was about 2 inches long by 1/2 inch wide and maybe 1/4 inch thick. (I started to say I "cut the cheese" but that's usually after the Mexican feast.) Then I split the poblano peppers in half and cleaned out the seeds. I cut the peppers in pieces and set each shrimp on a piece of pepper. You can use as much or as little pepper as you like. We like a big piece. I wrapped a slice of bacon around the whole thing to hold it all together. I put them in a cake pan and baked them for about an hour at 350 deg. About half way through I took them out and poured off some of the bacon grease. Just before I served them, I put them under the broiler to crisp the bacon a little. It's really hard to keep the cheese from melting out, so I try to wrap the bacon nice and tight and cover the end. Some people use a toothpick, but my bacon usually stays on pretty good. You can also make them with cream cheese. We make them all the time without the shrimp, too. I use jalapeno pepper halves filled with cheese and wrapped in bacon. You can buy poppers that are battered and fried in restaurants, and in the freezer section of the grocery store, but we like the bacon wrapped ones better.
